Shun Dual Core Nakiri Knife 6.5" w/ Saya
A nakiri is a Japanese-style vegetable knife. The blade shape is both graceful and practical. It is a favorite with professional chefs and home cooks around the world. The nakiri's blunt tip makes the knife safer to use in the kitchen. At the same time, you can easily process foods with the blade's abundant slicing and dicing capabilities. Simply use a push cut by moving the knife down and forward while keeping the edge parallel to the cutting surface. The beautiful and versatile Dual Core Nakiri is a must-have knife, not only for plant-based cooking, but for a full range of other cuisines as well.

About Shun Dual Core Knives
A first of its kind anywhere in the world, The Shun Dual Core knife collection features a dual-layered stainless steel Damascus blade, the first knife of its kind to feature not one but TWO premium quality stainless steels. It was considered almost impossible, but not for Shun who have put to rest the theory that a Damascus blade cannot feature two different high-quality stainless steels. Seventy-one alternating micro layers of high carbon, high chromium VG10, and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the herringbone pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the Dual Core's extremely sharp edge feels sharp longer. Etched laminations in the blade reduce drag, helping food release from the blade and gliding through each cut quickly and easily. Dual Core blades are thin, light, and strong. Traditional Japanese octagon-shaped handles in ebony PakkaWood provide a comfortable and secure grip to complete the look of these beautiful knives.
About Shun
Shun in Japanese actually translates to "at the peak of perfection," and no words could better describe this outstanding company. Renowned for their traditional knife making style and aesthetic design, the highly skilled artisans at the Kai Corporation (the parent company of "Shoon") have been making blades of the highest quality in homage of the legendary sword smiths of Seki, Japan for over 100 years. Each and every knife is handmade, from beginning to end, requiring at least 100 meticulous steps along the way. It is out of this respect and admiration towards their ancestors, coupled with advanced technology and materials, that Shun produces basically pieces of art that also happen to be razor-sharp knives.
