Miyabi knives are handmade in Japan. They use traditional techniques to produce a strong body and a scalpel-sharp blade. Miyabi Kaizen blades are made of a VG10 steel and are encased by 64 layers of Damascus for a lovely textured finish. The blades are put through a special ice-hardening process to maximize hardness of the steel, creating a Rockwell hardness of 60. Miyabi Kaizen knives feature a Micarta D-shaped handle, complete with red spacers, a mosaic accent and an end cap with the Miyabi logo.
